Compatible with all stovetops (except induction). When using the All-Clad roaster, start on a low flame for all applications except boiling. Preheat the pan on a low to moderate heat before cooking. When preparing to sauté or fry, add cold oil to your preheated pan to form a natural barrier that prevents food from sticking. Add your food to the pan when the oil is hot. There should be a sizzling sound when your food touches the preheated pan, indicating that the browning or searing process has begun. Leave the food for approximately 1 minute to sear. Medium to low heat is all you will need. After removing food from the pan, you can use the browned food bits for sauce by deglazing with wine or stock.
